A few weeks ago I was looking for a dish to make for a family gathering. Emerging from a cold winter, I was ready for some fresh and delicious produce. After a little pinterest perusal, a glance at my nutrition textbooks, and a peek in the refrigerator, I was ready to have a little fun in the kitchen. The result was delicious and I’d like to share it with you!
Ingredients:
Salad:
- 2 cups shredded green cabbage (high in vitamin K, vitamin C, dietary fiber)
- 2 cups shredded purple cabbage (vitamin A, K, C, manganese)
- 1 cup shredded carrots (vitamin A superstar, also some potassium)
- 1 large yellow pepper, diced (very high in vitamin C, also vitamin B6, folate, copper, potassium, manganese)
- 1 cup beets*, diced (I used frozen beets which were cooked and cooled, and it was still pretty tasty) (high in folate)
- 2 tbsp apple cider vinegar (braggs) or lemon/ lime juice
- 2 tbsp olive oil (healthy fat to absorb that fat soluble vitamin A!)
- Salt (to flavor dish and marinate it a bit) and pepper to taste
- optional: golden raisins or nuts/ seeds to garnish (peanuts, slivered almonds, cashews come to mind)
*Easily substitute other colorful veggies (or fruits!) for beets or ingredients vegetables that you or your family do not like! The cabbage is pretty non-negotiable though 🙂
Dressing:
- 1/2 cup tahini
- 1 tbsp tamari (sub soy sauce)
- 1/2 tsp dried ginger
- lime juice to taste
- salt and pepper to taste
Directions (incredibly easy and fast):
Mix all salad ingredients except vinegar and olive oil in a large bowl. Toss salad in dressing made of olive oil and vinegar and then with salt and put salad in the fridge until ready to serve (tastes best after about 12-36 hours in the fridge). In small bowl combine dressing ingredients, adjusting liquid ratio until it is creamy but pourable. Store dressing separately until ready to serve. To serve place salad on dishes and then drizzle tahini dressing over the top. Garnish with nuts and/or golden raisins if desired. Enjoy!
